Recipe and travel diary : Recipe of April 29, 2020 suggested by Esteban from Madrid, Spain

Pavlova
Ingredients :
For the meringue:
4 egg whites
200 g of sugar
1 teaspoon of white vinegar
1 tablespoon of cornflour
For the french chantilly cream :
20 cl of whipping cream
50 g of sugar
For the filling :
10 strawberries
15 raspberries
Recipe:
1.Preheat the oven to 120°C
2.Beat the egg whites with the vinegar into very stiff peaks. Add the cornflour and the sugar gradually. The mixture must be bright and the consistency firm.
3.Spread the mixture on a baking sheet covered with a silicone baking sheet or baking paper. Bake for 1h15.
4.Whip the cream and add slowly the sugar
5.Spread the chantilly cream over the meringue, spread fruit over cream, and sprinkle with icing sugar!
Some variations are possible depending on the fruit you prefer and if you prefer small individual meringues!
