Gnocchi

 

Ingredients:
1 kg of potato
300 gr of flour
2 egg yolks

Recipe:
1.Wash the potatoes, cook them for about 30 minutes,
2.Peel the potatoes.
3. In a bowl, mash the potatoes using a fork or potato masher.
4. Add to the mashed potatoes, the flour and the egg yolks.
5. Knead the preparation by hand until a homogeneous dough is obtained.
6. Generously flour your work surface and then work the dough and form small balls. Roll the gnocchi on the back of a fork.
7. Boil the salted water and poach the gnocchi until they rise to the surface. Drain in a colander.
8. For the crisp, brown the gnocchi in a pan.
